Vanilla CO₂-to extract is a pure, concentrated natural extract from fermented fruits of Vanilla planifolia, obtained by supercritical carbon dioxide extraction using a small amount of organic ethanol as a co-solvent. This extract represents a CO₂-to (total extract) – a complete extract that preserves the full spectrum of volatile and nonpolar components of vanilla, thus providing an exceptionally authentic fragrance and flavor. It has a light brown to brown color, a viscous to pasty consistency and an intense, warm scent typical of fresh vanilla pods. It contains approximately 12% natural vanillin, as well as trace amounts of p-hydroxybenzaldehyde, vanillic acid and lipid components that contribute to the fullness of the aroma.
