Cocoa CO₂-se extract is an aromatic extract extracted from cocoa butter(Theobroma cacao) by supercritical carbon dioxide extraction. This process is carried out in two steps - first the cocoa beans are pressed and completely defatted, then the cocoa butter is gently extracted of its flavours using counter-current CO₂ extraction. This is a CO₂-se (selective extract) - a selective extract containing mainly volatile flavouring substances that give the products their characteristic chocolate aroma. It is white to light brown in colour, solid at room temperature and turns into a liquid oil with a distinctive sweet cocoa aroma at 40 °C.
