Vanilla CO₂-to extract is a pure, concentrated natural extract from fermented fruits of Vanilla planifolia, obtained by supercritical carbon dioxide extraction using a small amount of organic ethanol as a co-solvent. This extract is a CO₂-to (total extract) – a complete extract that preserves the full spectrum of volatile and non-polar components of vanilla, providing an exceptionally authentic fragrance and flavor. It has a light brown to brown color, a viscous to pasty consistency and an intense, warming scent typical of fresh vanilla pods. It contains approximately 12% natural vanillin, as well as trace amounts of p-hydroxybenzaldehyde, vanillic acid and lipid components that contribute to the fullness of the aroma. CO₂-to extract is a complete (total) extract that contains not only volatile aromas but also resinous and lipid components. As a result, it has a thicker consistency, a fuller aroma and a higher fragrance intensity than the CO₂-HA (hydroalcoholic) extract.

It is viscous to pasty and can be easily liquefied in a water bath at room temperature. It is recommended to mix it with the oil phase or dissolve it in warm vegetable oil before adding it to the formulation.
