Xanthan gum is a natural thickener produced by bacterial fermentation of plant-based raw materials using the bacterium Xanthomonas campestris. It is a high-quality polysaccharide with excellent water solubility, enabling the formation of clear, stable and viscous solutions without odour and with a minimal risk of skin irritation.
